October is the month of sugar. And super cute costumes.

But, as a mom, I am bound and determined to get good food (aka protein) into Parker and her friends before they turn into Swedish Fish as they race around the West Village looking for their next sugar fix. The easiest and most economical way that I know how to do this is with eggs.

In between all the fall carnival sweets that we prepared on Fox & Friends last weekend (hello, caramel apples and funnel cakes!), Jamie and I made sure to sneak in a totally delicious, totally healthful Sweet Potato & Turkey Frittata for the little ones on the hayride. I loved making the frittata with Eggland’s Best because compared to ordinary eggs, they are better tasting, lower in saturated fat (25% less!) and higher in key nutrients. Don’t think I didn’t serve Parker a big ol’ slice before she dove back into the bouncy house with her Kindergarten class
