Brooke calls me her “Coverboy”… mainly to embarass me.

What she means is that my dish (see above) landed on the cover of ICE’s new course catalogue because it looks good- and just about anybody can make it. Well, you have to take my class first! The deal is, every dish looks like it belongs at any of New York’s finest, 4-star restaurants. But when you break them down, they have a few simple components.

Take the above. The “Coverboy” shot has 3 main ingredients– venison, butternut squash and mushrooms. Everything else for that dish is probably sitting in your pantry right now. Ok, so maybe it’s not your not average Wednesday night dinner, but you won’t need a team of trained sous chefs to pull it off yourself.
