I have a lot of Yogi Mamas in my world. By that, I mean that my closest girlfriends are health-conscious, gym-going, prana-posing, sometimes-meat-abstaining, wine-loving gals who eat super healthy at home (… and who love to indulge when they hit the town).
But it’s that home part that I focus on.
So I channel my Yogi Mammas when I stand at the stove and then sit at my computer to create recipes for Redbook.
The best recipe in my Healthy Fall Comfort Food roster is right here– my Italian White Bean & Kale Stew w Tofu. Sound too good to be, well… good? Think again! It’s my version of Tuscan ribollita, thickened with more delicious white beans and studded with tofu instead of bread and more bread.
