July 4th Leftovers Recipes on Fox & Friends
We joined the crew at Fox & Friends to show them how to put a gourmet twist on the hamburgers and ribs you’ve got in the fridge after the big cookout.
BBQ Rib Mac n’ Cheese
Serves 6
3 tablespoons butter
3 tablespoons all-purpose flour
2½ cups milk, heated
1 cup grated Sartori Sarvecchio Parmesan, plus more for topping
1 cup grated Sartori Montamore
4 cups cooked pasta
1 cup chopped BBQ rib meat
Melt the butter in a heavy bottomed pan over medium heat. Add the flour and cook, stirring constantly, until the mixture has the consistency of wet sand.
Slowly pour in the warmed milk while constantly whisking. The mixture will become extremely thick, but thin as more milk is added. Continue whisking until smooth. Bring the mixture to a low boil, stirring often to prevent scorching. Season with salt and pepper to taste, lower the heat to a gentle simmer and cook about 20 minutes, stirring every 2 -3 minutes. Remove from the heat. Add the grated cheese and stir until smooth.
Mix the cooked pasta and meat into the sauce. Transfer to an oven proof baking dish and spread to level. Top with more of the grated parmesan. Bake in the oven at 425˚F until golden brown and bubbly.
Hi Chef,
I watched The Human Calculator episode last night and you showed how to mix good ingredients to achieve great flavor. IE: the chicken burgers with mushrooms and strawberries.
Is that type of mixing in your books anywhere? Or do you plan on putting a book out to help people like me who have to watch the quality of what they eat?
Sincerely,
Kit
Hi Kit,
Thank you so much for checking in. We’re thrilled to hear you enjoyed the show! …and happy to report that we are currently working on a new book that will include all the information (and loads more) from The Human Calculator. Keep an eye on this website for inventive recipes and more info about the book.
